Here's a great vegan kale salad that was actually the first salad that i posted on my blog.

This salad goes very well with most pork dishes. Light and refreshing!Ingredients | Costco Kale Brussel Sprout Salad
2 (10 ounce) packages frozen Brussels sprouts Ā½ cup water Ā¼ cup apple cider vinegar Ā¼ cup vegetable oil 1 teaspoon salt Ā¼ teaspoon ground black pepper 1 tomato, chopped 1 tablespoon chopped fresh parsley Directions
Place Brussels sprouts into a saucepan, pour in about 1/2 cup of water, and bring to a boil over medium heat. Cover, and cook sprouts until hot, about 10 minutes. Remove from heat, and drain. Mix together the apple cider vinegar, vegetable oil, salt, and black pepper in a bowl; add the cooked sprouts and stir to thoroughly coat with dressing. Refrigerate until chilled, at least 2 hours. Just before serving, mix tomato into Brussels sprouts mixture; sprinkle with parsley. Info | Costco Kale Brussel Sprout Salad prep:
