But i've been making it meatless for my vegetarian and vegan friends for as i said before, i love adding in some extra grains to this vegetarian chili recipe to thicken it up and add some extra protein.

2 cups water, or more as needed
1 ½ cups uncooked green lentils
1 (15 ounce) can tomato sauce
1 (15 ounce) can fire-roasted diced tomatoes
2 medium carrots, diced
1 medium bell pepper, diced
1 small onion, diced
4 cloves garlic, minced
1 ½ tablespoons chili powder
2 teaspoons vegan Worcestershire sauce
2 teaspoons rice vinegar
1 teaspoon ground cumin
1 teaspoon yellow mustard
1 teaspoon liquid smoke flavoring
½ teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
6 large hamburger buns, split
Directions
Combine 2 cups water, lentils, tomato sauce, diced tomatoes, carrots, bell pepper, onion, garlic, chili powder, Worcestershire sauce, vinegar, cumin, mustard, liquid smoke, onion powder, paprika, cayenne, salt, and pepper in a slow cooker.
Stir to combine and cook on High until lentils are tender, about 4 hours, adding more water if necessary during the last hour. Serve immediately on buns or keep in the slow cooker on warm until ready to serve.
You can use white or yellow onion and red or green bell pepper.
